I love the classic pairing of peanut butter and chocolate, and these bars use wholesome sweeteners like coconut sugar and maple syrup so you can enjoy a treat that feels a little lighter.

Lately I’ve been obsessed with peanut butter — I want it in everything. I don’t worry about appearances when I’m happily scooping a spoonful of creamy peanut butter straight from the jar.

While some people prefer almond butter for health reasons, peanut butter is my go-to depending on mood. I buy natural, organic peanut butter (the kind that needs stirring) because it works for my taste and keeps me from overindulging too recklessly. Sometimes I even add a few dark chocolate chips on top — no shame.

These bars are the perfect compromise: peanut-butter forward, simple to make, and finished with a shiny dark chocolate topping. They’re made with clean, familiar ingredients so you can feel good about grabbing one (or a few) when a snack craving hits.

A quick note about texture: because these are no-bake and use natural peanut butter, they set up in the fridge but remain slightly soft. That makes them a bit messy to eat, which is part of their charm. If you use conventional, stabilized peanut butter the bars will be firmer.

Description

These oatmeal bars come together quickly. With peanut butter, oats, and a touch of natural sweetener, they’re an easy no-bake snack that hits the sweet-and-salty spot.


Ingredients

  • 1 cup natural peanut butter (or almond butter)
  • ¾ cup old-fashioned oats
  • ½ cup coconut sugar (or brown sugar)
  • 2 Tbsp pure maple syrup
  • ¼ cup almond milk (add as needed; regular milk works too)
  • ½ cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a bowl, mix the peanut butter, oats, coconut sugar, and maple syrup until combined.
  2. Add almond milk a tablespoon at a time until the mixture forms a uniform, slightly dry dough. You may not need the full amount; avoid making it soggy.
  3. Press the dough evenly into the bottom of a greased 8×8-inch baking dish.
  4. Melt the dark chocolate chips and coconut oil together (microwave in short bursts or use a double boiler), stirring until smooth.
  5. Spread the melted chocolate over the peanut butter layer.
  6. Chill in the refrigerator for 3–4 hours, or until set.
  7. Cut into bars and serve chilled. Store leftovers in the fridge.

Notes

These bars remain naturally soft thanks to natural peanut butter. They can be a little messy but are wonderfully satisfying.
