How To Make Creamy Balsamic Vinaigrette Dressing

You can make the dressing in a food processor or blender for the smoothest result; whisking by hand also works but takes longer to emulsify.

Add chopped shallot, balsamic vinegar, Dijon mustard, honey and a pinch of salt and pepper to the processor or blender. Pulse to break up the shallot.

With the lid in place, slowly drizzle in the flavorless oil through the feed tube or spout while blending. Continue until the dressing thickens and coats the back of a spoon. If needed, add a bit more oil to reach the desired consistency. The dressing will thicken slightly as it rests.

Use a neutral-flavored oil so the dressing’s flavors shine through.

Ingredients

  • 5 ounces spring mix lettuce
  • 1 lb strawberries
  • ¼ cup crumbled feta cheese
  • 3 ounces glazed walnuts
  • 1 English cucumber, diced

Creamy Balsamic Dressing

  • ½ large bulb shallot, chopped
  • ¼ cup balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • Pinch of salt
  • Pinch of pepper
  • ¼ cup flavorless oil

Instructions

  1. In a food processor or blender, combine the chopped shallot, balsamic vinegar, Dijon mustard, honey, salt and pepper. Blend briefly to break up the shallot.
  2. With the lid on, slowly drizzle in the oil while blending until the dressing thickens and coats the back of a spoon.
  3. In a large bowl, toss spring mix, sliced strawberries, crumbled feta, glazed walnuts and diced cucumber.
  4. Drizzle the dressing over the salad or serve it on the side and dress each portion individually.

Notes

If the dressing hasn’t thickened enough, drizzle in a bit more oil and blend again. It will also firm up slightly as it sits.
