The vegetables are briefly marinated in an apple-cider-based dressing so they absorb flavor before roasting. Then you transfer everything—vegetables and marinade—onto a sheet pan and let the oven do the rest, yielding caramelized edges and a glossy glaze without refined sugar.

The marinade combines apple cider or apple juice with olive oil, apple cider vinegar, Dijon mustard, agave syrup, fresh thyme and a bit of salt. Ingredients

  • 1/2 Cup Apple cider or apple juice
  • 2 Tablespoons Olive oil
  • 2 Tablespoons Apple cider vinegar
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon Agave syrup
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 5 Medium Carrots, chopped (about 2 cups)
  • 5 Medium Parsnips, chopped (about 2 cups)
  • 2 Large Sweet potatoes, chopped (about 2 1/2 cups)

Instructions

  • In a large mixing bowl, whisk together the apple cider, olive oil, apple cider vinegar, Dijon mustard, agave, thyme and salt to make the marinade/glaze.
  • Add the chopped carrots, parsnips and sweet potatoes to the bowl and toss to coat evenly in the marinade. Let the vegetables sit in the mixture for 15–20 minutes to absorb the flavors.
  • Preheat the oven to 400°F (200°C).
  • Pour the vegetables and marinade onto a large sheet pan and spread them out in a single layer. Roast for about 20 minutes, then toss the vegetables and return the pan to the oven for another 15 minutes, or until the vegetables are browned at the edges and the marinade has reduced to a thick, glossy glaze.
  • Allow the vegetables to rest for a few minutes, then serve warm. These are excellent straight from the oven or at room temperature.
