How to Make Blueberry Chia Mousse

Blueberry Chia Mousse
Ingredients
- 1 pint blueberries
- 1 tsp chia seeds
- 8 oz cream cheese, room temperature
- 1/3 cup heavy cream
- 4 tbsp sugar (or sugar-free substitute)
- 2 tsp lemon juice
Instructions
- Add the blueberries and chia seeds to a small non-stick saucepan. Cook over medium heat about 10 minutes, until the berries burst and the liquid reduces to a jam-like consistency. Remove from heat and let cool.
- In a medium bowl, combine the cream cheese, heavy cream, sugar, lemon juice, and half of the cooled blueberry mixture. Whip until the mixture is light and fluffy.
- To assemble, divide the remaining blueberry sauce between two serving glasses. Spoon the mousse over the sauce and top with fresh blueberries if desired.
- Refrigerate the mousse for about 2 hours, or until chilled and set.
