Today I’m sharing a beautiful fall birch tree cake decorated with colorful buttercream leaves. This cake is perfect for autumn celebrations and special occasions.
I love this design for its texture, dimension, and vibrant color palette. It reads as elegant yet is achievable for a range of skill levels.

The piping technique shown here adapts nicely to a single-tier cake or sheet cakes with equally beautiful results.
You can also change the type and colors of the trees for a different look. For example, trees with more branches, brown trunks, and green leaves create a very different feel than white birch trunks with colorful autumn foliage.
How to Make an Autumn Birch Tree Cake
Below is a concise step-by-step overview of the decorating process. A printable how-to card and a full video accompany this post.
This tutorial uses stacked 8″ and 6″ tiers frosted with vanilla buttercream. Use your favorite vanilla buttercream—classic or a lighter, fluffy version both work well.
- Frost the 8″ tier with light blue-tinted buttercream. Add green around the bottom edge using a small offset spatula. Keep the bottom tier on its own cake board sized to the tier.
- Use a bench scraper to blend and smooth the blue and green areas.
- Smooth the buttercream surface. You can use the hot knife method or a Viva paper towel to refine the finish, or simply smooth with a bench scraper or spatula.
- Frost the 6″ tier with blue buttercream and smooth. Chill both tiers in the freezer about 15 minutes to firm the frosting.
- Remove the cakes from the freezer and add four supports (we used bubble tea straws cut to height) into the bottom tier where the top tier will sit. Set the bottom tier on your cake base with a smear of buttercream and top it with the 6″ tier.

Piping the Birch Trees
- Using a small round piping tip or a piping bag with the tip removed, pipe the white birch trunks around the cake. Align the bottom of each trunk so it matches between tiers.
- Have the trunks branch or fork toward the top of the upper tier. Add fine dark markings to the birch bark using black coloring gel thinned slightly (we used a touch of vodka) and applied carefully with a toothpick or small brush.
- Use a leaf piping tip (tip 352) to pipe colorful buttercream leaves. Pipe leaves at varying angles and sizes to create depth and movement.
Optionally, add a few piped leaves around the cake base or on the cake stand for extra detail.

Autumn Birch Trees – A Buttercream Cake Tutorial
Learn how to create an Autumn Birch Trees cake featuring buttercream piping in this free cake decorating tutorial.
Materials
- Two tiers: 8″ and 6″, each on its own cake board. Frost with a stable vanilla buttercream (we used a fluffy vanilla version).
- Coloring gels: light blue, greens, reds, oranges, yellows, black. Tint about 1/4 cup buttercream per leaf color.
- Optional: small amount of vodka or clear spirit to thin gel color for painting bark details.
- Piping tips: small round tip for trunks; leaf tip 352 for leaves.
- Miscellaneous: disposable piping bags, bench scraper, offset spatula, toothpicks, supports (straws or preferred supports).
Instructions
- Work with stacked 8″ and 6″ tiers frosted in vanilla buttercream.
- Frost the 8″ tier with light blue buttercream and add green around the base. Keep it on its own cake board.
- Smooth the blue and green transitions with a bench scraper and clean the top edge with an offset spatula.
- For a polished finish, use a Viva paper towel or a hot knife technique to smooth chilled, slightly crusted buttercream.
- Frost and chill the 6″ tier on its own board. Chill both tiers about 15 minutes.
- Add four supports to the bottom tier, smear buttercream in the center, and place the chilled top tier on the bottom tier.
Piping the Birch Trees
- Pipe white birch trunks around both tiers with a small round tip or a bag with the tip snipped off. Align trunks between tiers.
- Add forked lines toward the top of the upper tier and paint fine bark details with thinned black gel using a toothpick or small brush.
- Pipe colorful leaves with tip 352 at varied angles for depth and movement.
