Coca-Cola Molten Lava Cake Recipe: Gooey Chocolate Soda Cake

Coca-Cola® has been part of my holiday memories since childhood. My dad has always loved Coca-Cola®, so each Christmas I’d find some small Coca-Cola® gift for him — a cookie jar, a pack of his favorite soda in glass bottles, or a little ornament for my tree the first year I moved out. During the holidays I’m often in the kitchen: Justin’s favorite fudge, cookies with the kids, and all the seasonal baking in between. Recently I found a forgotten box of chocolate cake mix in the pantry and decided to turn it into a festive dessert. I was out of eggs and didn’t want to run to the store, so I used a handy trick: replacing eggs with soda in a cake mix. It works and gives the cake a light, tender crumb with a subtle soda note.

I started with a boxed mix to save time, then dressed it up. After baking, I poked holes in the cake and filled them with hot fudge to create a molten-lava effect. I also added a splash of Coca-Cola® to the vanilla frosting for a touch of fizz and flavor, and finished the cake with Coca-Cola®-themed sprinkles for a festive look.

Coca-Cola® Molten Lava Cake

  1. Preheat the oven to 350°F (175°C). In a medium bowl, combine one box of chocolate cake mix with a 12 oz can of Coca-Cola® and mix until smooth.
  2. Pour the batter into a greased 9 x 13-inch pan and bake until fully set; a toothpick inserted in the center should come out clean. Baking time will vary—mine took about 25 minutes.
  3. While the cake is hot from the oven, use the bottom of a wooden spoon to poke holes across the surface. Spoon warm hot fudge into the holes, then let the cake cool completely so the fudge sets into the cake.
  4. Stir 2 tablespoons of Coca-Cola® into a container of vanilla frosting. Mix well and let it sit for a minute to allow bubbles to subside, then frost the cooled cake.
  5. Top with sprinkles if desired, slice, and serve.
