Summer equals ice cream. I keep my freezer stocked with frozen treats all season so my family can cool off anytime. My girls love popsicles and classic cones, and after the kids are in bed my husband and I often sneak a bowl of something creamy and indulgent while we relax on the couch.
My kids are happy with any kind of ice cream, but I have a soft spot for the really good stuff—the pints you hide at the back of the freezer behind the peas so they won’t find them. I went with the Madagascar Vanilla Bean flavor. Some people dismiss vanilla as plain, but when it’s made with real vanilla bean specks and deep vanilla flavor, it’s anything but. To showcase the ice cream I made soft, chewy vanilla bean cookies and turned them into generous ice cream sandwiches.

The cookies are similar in texture to snickerdoodles, but instead of cinnamon in the dough I use vanilla bean paste so the flavor comes through in every bite. I do roll the cookies in a light cinnamon-sugar mix before baking because the warm spice highlights the vanilla beautifully. A key tip: don’t make the cookies too tall. I scoop 2–3 tablespoonfuls of dough, roll them into balls, and then flatten them to about a half-inch before baking so they bake quickly and stay soft. Ten minutes in the oven yields tender, slightly chewy cookies perfect for sandwiching ice cream.
These vanilla bean ice cream sandwiches are the kind of treat that makes summer feel luxurious and simple at the same time.

Vanilla Bean Ice Cream Sandwiches

Homemade sugar cookies make the perfect base for rich, indulgent ice cream sandwiches.
Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 3 teaspoons vanilla bean paste
- 3 1/2 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar plus 2 teaspoons ground cinnamon
- 2–3 containers (14 oz.) Signature Madagascar Vanilla Bean Ice Cream
Instructions
- Preheat oven to 350°F. Line a cookie sheet with parchment paper or a baking mat. In a mixing bowl, beat together the butter and sugar until fluffy. Beat in the eggs and vanilla bean paste.
- Add the flour, cream of tartar, baking soda, and salt. Mix until just combined with the wet ingredients.
- In a small bowl, combine the 1/2 cup sugar and cinnamon. Scoop about 2–3 tablespoonfuls of dough and roll into balls. Roll each ball in the cinnamon-sugar mixture and place on the cookie sheet about 2 inches apart. Use the back of a spoon or spatula to flatten the dough to about 1/2-inch thick.
- Bake for 10–11 minutes or until just lightly golden. Let the cookies cool completely.
- To assemble, spoon about 1/3 cup of Signature Reserve Madagascar Vanilla Bean Ice Cream onto the bottom of one cookie. Top with another cookie and press gently to form a sandwich. Serve immediately or freeze briefly to firm up.
