Breakfast is the most important meal of the day, so why not celebrate the season — or any morning — with these warm and cozy Gluten Free Gingerbread Waffles?
The rich notes of molasses, bright ginger, and warming cinnamon blend into caramel-colored, fluffy waffles that feel like a holiday hug. They crisp nicely on the outside while remaining tender inside — perfect for chilly mornings.

Serve these waffles with a dusting of powdered sugar, a spoonful of whipped cream, or a generous pour of maple syrup. My favorite is buttermilk syrup for extra richness. Kids and adults both love them.
The secret to great waffles is a good waffle iron. We’re waffle fans and have tried several models. A flipping Belgian waffle maker gives consistently crisp exteriors and tender interiors. You don’t need to spend a fortune; the Presto Flip Belgian Waffle Maker is an affordable option that performs well.

The batter is quick to mix and can be refrigerated ahead of time. If you make it in advance, bring it to room temperature for about 20 minutes, stir well, and add a tablespoon or two of milk if it has thickened — rice flour blends can absorb moisture as they sit.
Happy holidays — from our family to yours.

Ingredients
- 3 large eggs
- ½ cup neutral-tasting oil (canola or avocado)
- 1 ½ cups milk (or dairy-free substitute)
- ⅓ cup molasses
- 1 teaspoon vanilla extract
- 2 Tablespoon sugar
- 2 ¼ cup gluten-free 1:1 flour (such as Bob’s Red Mill 1:1)
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoon allspice
- 2 teaspoon cinnamon
Equipment
-
Presto Flip Belgian Waffle Maker (or similar flipping Belgian waffle iron)
-
Waffle iron or mini waffle maker, depending on preference
-
Mixing bowls and whisk
Method
-
Whisk the eggs in a large bowl.
-
Whisk in the oil, milk, molasses, vanilla, and sugar until combined.
-
Add the dry ingredients and whisk just until smooth. A few small lumps are fine.
-
Preheat your waffle iron and let the batter rest while it heats. Resting helps gluten-free batters hydrate and lose any grittiness.
-
Cook according to your waffle iron directions. In a flipping Belgian waffle iron these waffles take about 2 minutes, but times vary by model.
-
Serve warm with powdered sugar, maple syrup, buttermilk syrup, or whipped cream. Enjoy!
