When Safeway asked me to try their O Organics Kombucha, I realized how behind the times I’d been—kombucha felt new to me, but everyone else seemed to know it already. After asking friends and tasting it myself, I can say it deserves the buzz. Kombucha is a lightly effervescent fermented tea with a pleasant tang, not overly sweet like many sodas, and it contains probiotics that support digestive health. It has quickly become a refreshing option I reach for along with water, coffee, or wine.

Safeway Kombucha and Healthier Battered French Fries

Because kombucha makes a great, healthier alternative to soda, I wanted a matching lighter version of classic battered fries. I experimented until I found a reliable method for oven-baked battered fries that deliver crisp, flavorful results without deep frying.

My first attempts taught me what not to do: a cornmeal coating overwhelmed the potato, and a thin egg batter made the fries clump together during baking. What worked was a thick, paste-like batter that clings to each fry without pooling on the sheet pan.

How to Bake Battered French Fries in the Oven

The trick is a batter with the consistency of a thick paste—think toothpaste rather than a pourable batter. That texture coats the potatoes evenly and bakes to a golden, slightly crisp exterior. Adjust the thickness by adding a little water or flour as needed. When done properly, these fries are an easy, healthier alternative to fried fries. Serve them with your favorite dipping sauce and a chilled kombucha for a satisfying, better-for-you snack.

Baked Battered Fries

These oven-baked battered fries are easy to make and taste as good as—or better than—the fried version.

  • Total Time: 40 minutes
  • Yield: 3

Ingredients

  • 1 1/2 pounds russet potatoes, sliced into 1/2″ strips
  • 1/4 cup milk
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon salt (adjust to taste)
  • 1/4 teaspoon garlic powder
  • 1/2 cup all-purpose flour
  • 2 tablespoons water (more as needed to adjust batter)

Instructions

  1. Preheat the oven to 450°F (230°C). Line a baking sheet with a silicone mat or parchment and lightly spray with cooking spray.
  2. In a container with a lid large enough to hold the potatoes, whisk together the milk, olive oil, chili powder, salt, and garlic powder. Gradually whisk in the flour and then add water a tablespoon at a time until the mixture becomes a thick paste (toothpaste consistency).
  3. Add the sliced potatoes to the container, seal, and shake very well so each fry is evenly coated. Shake in all directions to distribute the batter.
  4. Transfer the coated potatoes to a single layer on the prepared baking sheet, letting any excess batter remain in the container. Separate the fries so they are not touching for best results.
  5. Bake for 30–35 minutes, or until the fries are golden brown and cooked through. Serve hot with your favorite dipping sauce.
