Hubbyman and I just celebrated our 16th wedding anniversary. It feels like yesterday we were newlyweds on a Jamaican beach, sipping rum-filled drinks and soaking up the sun on our honeymoon. I served these Boozy Horchata Slushies for our anniversary and they instantly transported us back to those sun-drenched memories.

If you haven’t tried Jamaican rum, it’s worth seeking out, though any light rum will work nicely in this recipe. The sweet, creamy horchata flavors combined with smooth rum create a delightful, refreshing drink that evokes beachside relaxation.

Horchata is a traditional drink made from rice or almonds, flavored with cinnamon and vanilla. In the Southwest and many Mexican restaurants it’s typically served without alcohol and is a favorite with kids and families. By turning horchata into a slush and adding a splash of rum, you get a grown-up version that’s perfect for warm afternoons or a festive celebration.

Be transported back to the beach with these Boozy Horchata Slushies.
Ingredients
- 2 cups rice milk
- 1/3 cup Coco Real Cream of Coconut
- 3/4 tsp ground cinnamon
- 3/4 tsp vanilla extract
- 2 oz Jamaican rum, divided (or any light rum)
Instructions
- Freeze two slush mugs (or similar slushie maker cups) for at least 8 hours or overnight so they are solidly frozen.
- In a medium bowl, whisk together the rice milk, cream of coconut, ground cinnamon, and vanilla until smooth. Pour the mixture into the two frozen slush mugs.
- Let the mixture sit in the cups for 60–90 seconds, then scrape down the sides. Repeat this process, allowing the liquid to thicken and freeze, until it reaches a slushy consistency—about 10–15 minutes total.
- Once the mixture is frozen and thick, add 1 oz of rum to each mug. After adding the rum the mixture may become more liquid; continue the scraping and freezing process for a few more minutes until the slush restores.
- The entire freezing process typically takes around 20 minutes but may vary with room temperature or how chilled the ingredients were. Serve immediately, close your eyes, and enjoy the beachy vibe.
