  • 3 overripe bananas, mashed
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup honey or maple syrup
  • 1/3 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups whole wheat flour

Instructions

  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin pan with liners and set aside.
  • In a large bowl, combine the mashed bananas with baking soda, baking powder, salt, and cinnamon.
  • Stir in the honey or maple syrup.
  • Beat in the oil, eggs, and vanilla extract until evenly combined.
  • Add the whole wheat flour and gently mix until just combined—do not overmix.
  • Scoop the batter into the prepared muffin cups, dividing evenly.
  • Bake for 18–19 minutes, or until a toothpick inserted in the center comes out clean.
