Sweet, chewy, tangy dried fruit candies made from a single ingredient: fresh pineapple, transformed into a natural snack. These rings turn into chewy, concentrated bites with low oven heat and time—no dehydrator required. My batch happened to be pink, but any pineapple will work.
You don’t need special equipment—just an oven set low and about eight hours of patience.

Pineapple plus low-and-slow heat yields a naturally sweet, tangy treat. This method works for many fruits—apples, strawberries, peaches, pears, or blood oranges—so you can make similar snacks year-round. Each fruit lands somewhere on the sweet-to-tart spectrum, so choose based on how sweet or bright you want the final result. If your fruit is tart, a light dusting or quick toss in sugar before drying will balance the flavor.
Seasonal ideas: spring strawberries, summer pineapple and peaches, fall apples and pears, winter citrus. These dried fruits keep well for snacks, lunchbox additions, or homemade gift jars.
Storage: store dried rings in an airtight container at room temperature for up to one month. For longer storage, keep them in the refrigerator or freeze in a sealed bag.

Any pineapple works—classic yellow or pink varieties. Choose a ripe, fragrant fruit for the best flavor and natural sweetness.

Trim the pineapple: remove the top, bottom, and rind. Slice horizontally into rounds about 1/4 to 1/2 inch thick and remove the core from each slice.

Arrange the rings in a single layer on a baking sheet fitted with a wire rack, or use parchment paper or a silicone baking mat to prevent sticking.

Dry in a 175°F (about 80°C) oven for roughly 8 hours, flipping the rings every couple of hours so they dry evenly. Timing will vary based on thickness and oven; aim for chewy, slightly tacky centers and caramelized edges.

When cooled, store the dried pineapple in an airtight container for up to one month.
