Why we love this recipe:

Frozen peas are a convenient pantry staple and are often sweeter and more tender than peas that have been sitting in the fridge. Because they’re flash-frozen soon after harvest, they retain their flavour and require no shelling. I always keep a bag in the freezer for quick recipes like this pea dip.

This dip has a clean, light flavour from lemon and mint, with tahini and olive oil adding richness. It’s equally good served with crisp vegetable sticks, crackers or toasted pita, making an attractive and appetising platter for guests or family snacking.

Dips are an effortless way to entertain: offer a few different varieties for a colourful, nutritious starter that most people enjoy.

Step by step instructions:

The two steps to make this recipe in a photo collage - all of the ingredients in a blender, and the blended dip.

This Pea and Mint Dip comes together quickly. First, thaw the peas.

  1. Place the defrosted peas and the remaining ingredients into a small food processor or blender.
  2. Process until you reach the desired texture — pulse briefly for a chunky dip or blend longer for a smooth, creamy spread. Add a little extra olive oil or lemon juice if you want a looser consistency or brighter flavour. Season with salt and pepper to taste.
  3. Transfer to a serving bowl and garnish with lemon slices, mint leaves and a drizzle of extra virgin olive oil. Serve with crackers, toasted pita or an assortment of crisp crudités.

Tips for success and FAQs:

Frozen peas are versatile and convenient; they work well in salads, frittatas and fritters as well as dips. This recipe is forgiving: adjust lemon or tahini to suit your taste and blend to the texture you prefer.

Can I make the dip in advance?

Yes. You can make it a day ahead to allow the flavours to meld.

How long will the Pea and Mint Dip last?

Store it in an airtight container in the refrigerator for up to four days.

What else can I use the dip for?

Use it instead of butter or mayo in sandwiches—particularly good with crispy bacon or tomato slices. Spread it on crostini and top with feta, or serve alongside roast chicken, fish or lamb for a bright accompaniment.

Ingredients

  • 2 cups frozen peas – thawed
  • 1 clove garlic – peeled
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh mint – finely chopped
  • 2 tablespoons tahini
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice
  • Sea salt and freshly ground black pepper – to taste

Instructions

  • Place the defrosted peas and the remaining ingredients in the bowl of a small food processor.
  • Blend to a smooth paste, adding more oil or lemon juice to reach the desired consistency and flavour. Season to taste.
  • Serve with crackers, toasted pita bread or a selection of colourful crudités.

Notes

  1. To thaw peas quickly, spread them out on a large plate to defrost evenly.
  2. Baby peas are sweeter and work particularly well in this dip.
  3. Extra virgin olive oil adds flavour and a smooth texture.
  4. Measurement notes: an Australian tablespoon is 20ml (4 teaspoons); in many other countries a tablespoon is 15ml (3 teaspoons). Adjust if needed.
  5. When zesting citrus, use only the coloured outer skin and avoid the bitter white pith. Zest before juicing.
  6. Because peas are naturally sweet and lemon acidity varies, taste and adjust lemon juice to your preference.
