This morning Dino made a batch of Belgian waffles, this time adding about a tablespoon of the pumpkin pie spice I prepared last year. We topped the waffles with sliced banana and real maple syrup. They smelled irresistible and tasted even better.

Belgian Waffles

These are simple, classic waffles made from flour, eggs, butter and sugar, with a warm hint of pumpkin pie spice for extra depth.

Ingredients:
2 cups all-purpose flour
1 tablespoon pumpkin pie spice
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1½ cups warm milk
⅓ cup butter, melted
1 teaspoon vanilla extract
1 can vegetable oil spray (or other cooking spray)
Prep Time: 20 minutes
Cook Time: 15 minutes
Directions:
1. In a large bowl, whisk together the flour, pumpkin pie spice, salt and baking powder. Set aside.
2. In a separate bowl, beat the eggs with the sugar. Stir in the warm milk, melted butter and vanilla. Pour the wet mixture into the dry ingredients and mix just until combined. Allow the batter to rest for 10–20 minutes to improve texture.
3. Preheat your waffle iron to the desired temperature.
4. Lightly coat the preheated iron with cooking spray. Ladle batter into the iron and cook until the waffles are golden and crisp. Serve immediately with toppings of your choice—sliced banana and maple syrup are especially good with the pumpkin spice.
